Ingredients:


For the couscous:

500g couscous

1 tablespoon salt

2 tablespoons olive oil


For the semolina:

250g fine semolina

1 tablespoon melted butter


For the broth:


1.5 liters vegetable (or chicken) broth

1 onion

2 garlic cloves

1 piece of ginger

1 teaspoon ras-el-hanout

1/2 teaspoon turmeric

Salt and pepper


For the vegetables:


2 carrots

2 zucchinis

1 turnip

1 sweet potato

1 handful of green olives

1 handful of raisins


Optional (for the meat):

500g lamb or beef, cut into pieces

Preparation:


Prepare the couscous:

1. Place the  couscous in a large bowl.


2. Add salt and olive oil.


3. Gradually pour boiling broth over the couscous, mixing gently with a fork.


4. Cover and let it swell for 15 minutes.


5. Fluff the couscous with a fork and set aside.



Prepare the semolina:


1. Place the semolina in a bowl.


2. Add the melted butter and mix well.


3. Cover and let rest for 10 minutes.



Prepare the broth:


1. In a large pot, sauté the chopped onion, garlic, and ginger in a bit of olive oil.


2. Add spices, meat (if using), and chopped vegetables.


3. Pour in the broth, season with salt and pepper.


4. Bring to a boil, then reduce heat and simmer for 30 minutes to 1 hour, until vegetables are tender.



 Assemble the couscous:


1. In a deep serving dish, layer couscous, then vegetables and meat.


2. Pour some broth over the layers.


3. Repeat layering until all ingredients are used up.


4. Finish with a top layer of couscous.


5. Sprinkle with semolina and olives.

Serving:


For an authentic touch, serve couscous in a deep clay dish.

Accompany with harissa and bread.
